Western diet and gut health

The Western diet - high in ultra-processed foods, refined sugars, saturated fats, and artificial additives and low in fibre and plant diversity - consistently causes the greatest damage to microbiome diversity and function. Research tracking international migrants shows significant microbiome degradation within a single generation of Western diet adoption. Eating 30 or more different plant species per week is one of the strongest evidence-based predictors of microbiome richness.
